Processed cheese or American Cheese is a food product made with cheese, milk (or oil and water), and usually other flavoring and coloring agents. It has a taste and appearance similar to cheese, but a different texture and very different melting properties.

It is generally made from the scraps (trimmings, spoilage, etc.) of a variety cheeses, but colored yellow and marketed to compete with mild Cheddar.
